And so did the cravings for pumpkin everything. With Fall in full swing, we thought we'd kick off the season with new products and recipes to help you turn up your baking game and get everyone in the holiday spirit. We combined the beloved, mouth-watering glazed gingerbread cookie recipe with Joe's soon-to-be-famous maple pumpkin ice cream - for the perfect ice cream sandwich bite. Warning: they are beyond delicious and difficult to share. We recommend making a double batch.

Step One:

Step Two:

GATHER YOUR INGREDIENTS

1 c. heavy cream
1 c. whole milk
1/2 c. packed dark brown sugar
6 egg yolks
1/2 tsp. cinnamon
1/4 tsp. ground ginger
1/8 tsp. of nutmeg
1/8 tsp. of salt
3/4 c. pumpkin puree
1 tsp. vanilla
1/4 c. maple syrup
1 c. crushed graham crackers
2 tbsp. Butter (Melted)
2 tbsp. Maple Syrup
2 tbsp. Heavy cream

Joe’s Maple Pumpkin Pie Ice Cream

Prep time: 10 min | Cook time: 10 min | Cooling time: 2 hr | Freezing time: 15 min

YIELD 6 SERVINGS


 
 

INGREDIENTS

· 1 c. heavy cream
· 1 c. whole milk
· 1/2 c. packed dark brown sugar
· 6 egg yolks
· 1/2 tsp. cinnamon
· 1/4 tsp. ground ginger
· 1/8 tsp. of nutmeg
· 1/8 tsp. of salt
· 3/4 c. pumpkin puree
· 1 tsp. vanilla
· 1/4 c. maple syrup

INSTRUCTIONS

1. Pour whole milk, ½ cup of heavy cream and brown sugar into a saucepan. Warm on medium heat stirring constantly until the sugar is dissolved.

2. Whisk together the egg yolks, salt, and spices into a separate bowl. Slowly pour the heated milk into the egg mixture while whisking constantly to temper the yolks. Pour mix into saucepan and continue to simmer for another 3-5 minutes or until thick enough to coat the back of a wooden spoon.

3. Add pumpkin puree, maple syrup, vanilla and the remaining 1/2 cup of heavy cream into the mix and whisk until thoroughly combined. Sieve through a fine mesh to remove any lumps and refrigerate until cool.

4. Once the mixture is cold follow the directions for your specific ice cream maker to churn.

5. Once the ice cream is finished, add the graham cracker swirl then freeze the ice cream for another 2 hours or until firm.


GRAHAM CRACKER CRUST SWIRL

INGREDIENTS

· 1 c. crushed graham crackers
· 2 tbsp. Butter (Melted)
· 2 tbsp. Maple Syrup
· 2 tbsp. Heavy cream

INSTRUCTIONS

Add the ingredients into a bowl and mix until well combined.
